Winemaker George Troquato combines small, intensely flavored grapes with meddle-free winemaking to produce three lines of complex, well-balanced wines: Santa Cruz Mountains Collection, Central Coast Classics, and Limited Production Series.
Expressing a unique sense of place, our Family of Santa Cruz Mountains Wines includes Cabernet Sauvignon, Pinot Noir and Chardonnay. Grapes are cultivated by local growers whose pampered vineyards enjoy the ideal conditions of a warm, Mediterranean climate and lean mountain soils. Following harvest, fruit is rushed to the winery where it receives gentle handling with state-of-the-art equipment. Wines are fermented in small lots, aged in the finest French oak barrels, and finally bottled in exquisite packaging.
Our Central Coast Wines start with fruit from some of California’s most sought after vineyards. Like our sources in the Santa Cruz Mountains, they enjoy warm days and cool nights, have great soils, and are farmed by growers committed to producing the finest grapes in the land. Wines are carefully fermented and aged in a selection of American, French and Hungarian oak barrels, and are characterized by the fresh off-the-vine qualities offered by the grapes on the day they were picked.
Cinnabar’s Limited Production Series is available in our Saratoga Tasting Room or via our online Wine Store. Most wines are made in ultra small lots, ranging from one to six barrels, or the equivalent of 25 to 150 cases. Grapes for some wines are grown in regions where we have longstanding relationships with local growers (Santa Cruz Mountains, Paso Robles, and Santa Lucia Highlands) while others are farmed in premier viticultural areas such as the Red Hills of Lake County, the Clements Hills of Lodi, or Sonoma County.
