2006 Mercury Rising Blanc

Mercury Rising Blanc is the proprietary name of Cinnabar’s stylish white wine blend. Starting with flavorful fruit from exceptional vineyards, we aim to produce a crisp, enchanting wine with a hint of grassiness that is free from the dominance of toasted oak barrels or malolactic fermentation.

In 2006, sources in Monterey County, Sonoma County and Clarksburg contributed sauvignon blanc, viognier and semillon. Lots were fermented separately and then blended, creating a wine with bright fruit components, lively acidity and intriguing complexity.

Tasting Notes

Enjoy aromas of Meyer lemon peel, white peach, honeysuckle, wet stones and grass. The palate shows flavors of honeydew melon, pear and citrus with crisp acidity and a refreshing texture. It finishes long and clean with bright fruit and minerals. Serve with Gruyère cheese fondue, roasted turkey sandwiches, or Caesar salad.

Hand harvested September 21 – October 1, 2006

Cold fermented in stainless steel tanks for two weeks to preserve varietal integrity

No malolactic fermentation, oak fermentation or oak aging
